Caol Ila was founded in 1846, and it’s the most productive distillery in Islay, and the one of the most important distilleries of the global largest spirits group, Diageo.  Like Mortlach, Caol Ila has been very significant among whisky lovers and master blenders for so many years.  All the blended whisky brands own by Diageo use the cask strength whisky of Caol Ila.

Although it’s Islay peated whisky, Caol Ila is not a heavy peated whisky, instead, it has a light and fresh peated flavor.  The body of the liquid is a soft and fresh fruit aroma, and the sweetness of the malt brings the light and elegant smoky flavor.  Compared to other Islay whiskies, Caol Ila is like a lady with elegance and little makeup.  Therefore, it becomes the entry brand of Islay whiskies.

【Tasting Note

  • Nose: Elegant scent of lily with the aroma of honey.  There is an obvious smokiness with light woody smell from the cask.
  • Palate: Very apparent sea breeze saltiness in the mouth.  It gradually becomes a soft palate with peatiness and smell of charred casks.  It is like a sea salt flavor of savory cake with a continuous sweetness.
  • Finish: The saltiness in the mouth became dark chocolate, and there is a subtle light sweetness of melons, which is soft and lasting.
